Sharing a recipe that I found on Pinterest via Young Twin Mommy.
My 20 month old twins (things have changed JUST a little since I let cobwebs grow on this blog) love these and I thought it would be a helpful recipe to share here for anyone who may be interested.
High Fiber Toddler Cookies (We call these "Prune Cookies" at our house.)
Recipe via Young Twin Mommy
Ingredients:
1 1/2 cups prune puree
1/2 cup of oil - olive, coconut, etc.
2/3 cup sweetener - honey, agave, maple syrup, etc.
1/2 teaspoon vanilla extract
1 egg
1 cup whole wheat flour
1 cup old fashioned rolled oats
1/2 cup oat or wheat bran (or more for desired consistency - I usually use closer to 1 cup)
1/2 teaspoon cinnamon
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon kosher salt (I omit this.)
Ground flax seed (optional) - I add about 1/3 cup.
Directions:
Preheat oven to 350.
Combine the first 5 ingredients in a large bowl or mixer; beat well. Add in the rest of the ingredients one at a time. Add more wheat bran until you reach desired consistency. The "dough" will be thinner than the cookie dough you're likely used but it will still bake just fine.
Drop cookie dough onto prepared baking sheet in golf ball size, put baking sheet into the oven and bake about 12 minutes. Allow to cool. I put these into a freezer bag once cooled, freeze them and from there get them out as needed. They will thaw quickly at room temperature.
Note: The recipe above is for one batch. I double this recipe when I am making it bc it is a lot of ingredients to get out and also they freeze really well. You will see the blogger I linked to says she can get 65 cookies from one batch. I get 52 cookies with TWO batches - I guess I just make bigger cookies. :)

"Ranger Joe"Cookie Recipe
These are THE cookies I remember my mom making the most as a kid.

Mom's Ranger Joes
Ingredients:
1 cup unsalted butter, softened
1 cup sugar
1 cup brown sugar
2 eggs
1 TBS vanilla extract
2 cups flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 cup oats
2 cups Rice Krispies cereal
1 cup shredded sweetened coconut
Directions:
Preheat oven to 350. Sift together flour, baking soda, baking powder & salt in a bowl. Set aside. In a separate bowl, cream butter & sugars in a with an electric mixer. Add eggs & vanilla. Slowly add in sifted ingredients and mix until combined. Add oatmeal; then cereal, then coconut. Mix each until combined. Drop into golf ball size portions onto baking sheet covered in parchment paper. Bake at 350 for 15 minutes or until done.
Note: My mom would press the dough down with a fork prior to baking. I press each cookie down with the bottom of a glass AFTER baking. Whatever works for you!
